The one great thing about going away for a few days is that you come back to banana perfect for baking with. Those lovely overripe squidgy bananas, that I get to whisk them into a nice comforting Wintery bake. Recently I was offered to choose a box of products from TheFoodMarket.com. An online marketplace for natural and organic food that is made and sold by small, independent merchants. Within this box I received a lovely tub of Pip and Nut Almond butter. Nut butters are my fave. So what better way to jazz up my cake than adding in some lashings of this creamy almond butter. As well as this I opted for some warming spices and an extra health kick of chai and flax seeds. Oh and you cant forget a lovely luscious dose of crumbled chocolate that melts through the cake. Here is my recipe for an almond butter banana cake. Enjoy!
ALMOND BUTTER BANANA CAKE INGREDIENTS:
1 tsp of baking soda
50ml of plant based milk (We used Alpro almond)
3/4 cup of olive oil
1 tbsp of honey (We used Rowse’s)
2 tbsp of almond butter (We use Pip & Nut)
3 ripe and mashed bananas
190g of self raising flour
40g dark chocolate (We use Love Cocoa)
1 tbsp of chai seeds (We use My Vitamins)
1 tbsp of flaxseed (We use Linwoods)
Sweet Freedom choc shot
Drizzle of almond butter
A sprinkle of pumpkin seeds
ALMOND BUTTER BANANA CAKE METHOD:
Preheat the oven to 160 degrees and line your tin (you can use a loaf tin or a cake tin whichever you prefer)
Mix the baking soda with the milk and leave aside.
In another bowl mix together the olive oil and honey, then slowly add in the eggs.
Then combine with the mashed bananas.
Sift in the flour in slowly alternating with the milk mixture.
Then once all combined, add in the almond butter, flax and chai seeds.
Finally fold in the chocolate pieces.
Pour the mixture into your prepared tin and bake for around 45 minutes.
Once ready allow to cool and add your toppings.
Interesting fact – Almond butter is rich in antioxidants that help reduce oxidative stress, which prevents the body from repairing itself.
