This is by far the most easiest and tastiest summer salad you could make. I spend all summer eating and making salads and I am sick of the same old leafy base. Its boring. So I decided to whip up something different. We are a house of chickpeas and I love cooking with them. However I forget how nice they are on their own. I also forget how good chickpeas actually are for you. They contain super amounts of protein and fibre. So I thought a chickpea tomato and feta salad. Also if you are dodging meat they are the perfect alternative to give you some key nutrients There are so many recipes you can many recipes you can make using chickpeas so you should get experimenting. I wanted a sustainable salad so I added some feta cheese and I also mixed in some cherry tomatoes.
For the dressing I thought I would add a little kick. So I mixed together some olive oil, lemon juice and chili flakes. Woooah. Here is your tasty but actually filling salad.
CHICKPEA TOMATO AND FETA SALAD INGREDIENTS: MAKES 2
- 1 can of chickpeas
- 10 cherry tomatoes (halved)
- 50g feta cheese
- 1/2 lemon juice
- 1 tbsp of chili flakes
- 2 tbsp of olive oil
CHICKPEA TOMATO AND FETA SALAD SALAD method:
- Mix up the lemon juice, chili flakes and olive oil.
- Pour half a can of chickpeas in each bowl.
- Add 5 tomatoes in each and split the feta between the bowls.
- Drizzle on the dressing.
- Toss the salad around a bit to make sure its nicely coated in dressing.
