EASY SATAY NOODLES

So we are currently a couple weeks into our health kick and I have noticed the difference. I feel less jelly and my partner has cheekbones! One thing that he has craved for is fresh noodle dishes. Anything I can think of from stir frys to noodles and sauce packed with veggies. I was totally happy to oblige. I enjoy a good noodle dish and packed full of veg you cant get much healthier. We are a household of nut butter lovers, so when it came to creating a sauce I opted for a satay sauce with a kick. Also the peanut butter would give the dish a protein boost, something that was needed as we went for a meat free dish.  I can not deny this was an uber tasty dish that was quick and simple to make armed with my new non stick tefal, this will be a satay noodle dish on our regular menu.

NOODLES, SATAY, SATAY NOODLES, VEGETABLES. VEGETABLE NOODLES , PEANUT SAUCE, CHILLI, #LIFESITTLEPLEASURES,
SATAY NOODLES INGREDIENTS

SAUCE
1/2 onion grated
200 ml coconut milk
1/2 tsp chilli flakes
7 tbsp Whole Earth peanut butter
2 tsp Nutriseed coconut sugar
1 1/2 tbsp dark soy sauce

NOODLES
1 pack of noodles
1 pack of baby sweetcorn
1 pack of green beans
1/2 onion
2 cloves of garlic

TOPPINGS
Japanese Tamari superseeds from Punch Foods

EQUIPMENT NEEDED
Non stick frying pan
Chopsticks
Bowls & Plates
Sauce Pan
Steamer

SATAY NOODLES METHOD

Place pan on medium heat and allow water to boil.
Cut sweetcorn and beans into pieces.
Once water is boiling, add noodles as well as the steamer and the veg.
For the sauce, simply add all the ingredients to the sauce pan.
On medium heat bring sauce to the boil and then keep warm.
Finely chop the onion and garlic.
Add to the frying pan until golden brown.
Drain the noodles.
Add everything else to the pan and mix well.
Sprinkle on some superseeds.
Voila. Bon appetite.

Interesting fact : Peanut butter contains antioxidants and other Oleic acid that is helpful in preventing type 2 diabetes and aids in weight loss.
