HEALTHY HARISSA CHICKEN

HEALTHY, HEALTHY DINNER, CHICKEN, MOROCCO, CHICKPEAS, HARISSA, PAPRIKA, HARISSA CHICKEN

Whipping a tasty healthy meal together is not as hard or as daunting as it may seem. There is always countless meal ideas flying around, however many contain some sort of fancy ingredient or piece of equipment. I want something that I can pull out of the fridge and throw together in 30 minutes, but still have flavour! Don’t get me wrong I love a good salad every now and then but I enjoy something that is going to fill me up for the evening. In my kitchen there is an array of spices. It seems to be something that you collect when you go into the adult world. Once you have a small combination of spices, some spices and tasty veg then you can make up my healthy harissa chicken.

HEALTHY HARISSA INGREDIENTS:

1 can of drained chickpeas
1 tbsp paprika
1 courgette sliced
1 tsp chili powder
2 diced chicken breasts
2 tbsp harissa powder
A handful of baby spinach
1 packet of tilda brown & wild rice
1 tbsp coconut oil

HEALTHY HARISSA METHOD:

Heat the oven to 180 degrees
Melt the coconut oil
Mix the courgettes, chickpeas with the chilli and paprika powder
Roast in the oven for 30 mins
Mix the chicken with some virgin olive oil and add the harissa powder
Fry until golden brown
Mix with the chickpea combo
Add to the rice and the baby spinach
Enjoy

    This sounds so easy but really tasty and healthy too! I’m a big fan of a kick of chilli, it really takes a dish up a notch! As I’m pescaterian, I’d need to find a substitute for the chicken, but other than that, I’d love to try this recipe!

  4. This looks amazing and also so so healthy! I love that! My favorite chicken dish so far has to be chicken Parmesan pasta! Not healthy but very delicious!

  7. I’ve never heard of this before, but it looks delicious! You’d never have guessed it was an easy-to-put-together meal from the picture you took. My favourite chicken dish would definitely have to be a roast dinner. I’m never usually one for English traditions, but I love that one!
