I have never been the biggest of breakfast eaters, however now I have made it my mission to head to the gym before work, there is not a chance I can skip breakfast, right?! Well technically I eat after the gym, this makes the whole situation a lot harder. Of course, I can’t just whip up an omelette or scrambled eggs at work. This left me wondering what great nutritious breakfast can I take to work for after the gym. I am also trying to limit my sugar intake, ha you won’t think when you see this recipe. However, I only want to eat natural sugars and cut all that processed crap out. Yet I am a sucker for it, so I wanted something that made me feel naughty but really it isn’t. Yes, I came up with healthy breakfast cookies. Everything you should have for breakfast as a crisp cookie. Winner. You know you want it.
HEALTHY BREAKFAST COOKIES INGREDIENTS:
1 cup of rolled oats
1tsp chai seeds (I use Prana Protein)
2 mashed bananas
1 tsp of cinnamon
2 squares of Love Cocoa dark coffee chocolate (The higher the cacao the less sugar)
1tsp of nutmeg
HEALTHY BREAKFAST COOKIES
Heat the oven at 180 degrees.
Mash the banana into a bowl, until it’s almost like a puree.
Add the rolled oats, cinnamon, nutmeg and chai seeds.
Break up the chocolate and pop that in.
Mix all together until well combined.
Roll into 10 balls and flatten on the tray.
Bake for around 15 mins.
